Behind the Desserts at SNU: How Alicia Knight Creates Treats and Community

After a long day of classes, many SNU students and staff head to the cafe for a pick-me-up or a sweet treat. These delicious desserts do not appear from nowhere. SNU is blessed to have the talented Alicia Knight baking for us. From classic chocolate chip cookies to seasonal treats, Knight keeps a variety of items on the menu throughout the day. Her baking has become a small but meaningful part of campus life, helping students slow down and enjoy something sweet before heading off to study or do homework.

“Honestly, I get a lot of requests from the students, and I base all my desserts on that,” Knight expressed. “I want the students to have what they like. They work hard and deserve special treats.”

Knight’s treats bring us happiness, but her sweet heart does as well. She is always offering the freshest goods with a smile and greeting everyone who stops by with warmth and kindness. She helps students feel at home and comforted, even on the most stressful days. When asked what inspires her caring spirit, Knight claimed, “I hope Jesus’ love shines through me and that I represent Him well.” Her faith and compassion fill the cafe just as much as the smell of her fresh pastries and cookies.

She is not just a baker. She is also a mother of three and a grandmother to five. Knight shared that her grandchildren are her life, so when she is not here, she is spending time with them. She was born and raised in San Diego, California, but has lived in Oklahoma for 20 years. Knight did not always bake for a living. She once worked in management, putting in long hours while praying to God for a better job. In August 2025, she was led to SNU. “My most favorite part of SNU are the students. You guys are so awesome and truly the best part of my job,” Knight expressed.

Knight’s presence at SNU is about much more than the treats she makes. Through her kindness, faith, and love for students, she has helped create a place that feels warm and welcoming. Her story reminds us that small acts, like sharing a cookie or a smile, can make a big difference. SNU is blessed to have Knight with us, not only for her baking but for the joy and care she brings to campus every day.
